Sushi is my top 3 favorite food in the whole wide world, and nr. 1 for my children so our bellies need it occasionally more then often. My youngest who’m is 75% Chinese has declared himself as Japanese because the Chinese don’t have Sushi.
But the work, I’m not gonna lie is intense, especially if U use some fried panko ingredients.
U would think it gets easier the more U do it but it does not for me and it doesn’t help that we have 2 members of the family with their own Sushi restaurant or it does help actually 🙂
I’m not a big fan of bread, I like it but our Asian bodies don’t really want it so on a rare occasion if the sun and the moon are aligned with three stars or whatever I will go into the kitchen and make it myself and recently I discovered the Sushi Sandwich or the Onigirazu as they call it, it is less work and the taste is the same and thus ideal for my Kids’s Lunchbox which we will then call a Bento box of course 😉
But even still, I made it only once, may it Inspire u to do it a bit more :-))
The ones U see in the picture are with Tuna, Chicken, Luncheon meat and Egg.
I wouldn’t recommend luncheon meat however, the taste is not that wonderful and of course not very nutricious.
The rest is Heaven..
* the Fried chicken en shrimp are made with panko crumbs, so healthier en glutenfree
Onigirazu Japanese Rice Sandwich
Onigirazu
Ingredients
- Nori seaweed
- sushi rice
- rice wine vinegar
- sesame seeds
- japanese soy sauce
- wasabi
- eggs
- dashi paste or bouillon
- tuna
- mayonaise
- spring onion
- cucumber
- fried onions
- chicken breasts
- shrimp
- panko crumps
- shiracha
- teriyaki sauce
- avocado
- tobiko/fish eggs
- surimi
- sushi rice
Directions
- RICE:
- cook 1 pack of rice as mentioned on the package, then let it cool down and add 8 tablespoons of rice vinegar,Â
- 1 teaspoon of salt and 1 teaspoon of sugar or some sugarfree sweet
- (this will be enough for +/- 10 sandwiches)
OMELET: - 5 eggs
- 2 tbsp sweet like sugar or honey/agave
- 1 tsp rice vinegar/mirrin
- 1 tsp soy sauce
- 50 ml (dashi) bouillon
- ½ tsp salt
- Mix everything together and bake in the pan on both sides
TUNA: - 1 can of tuna
- 1 tbsp mayonaise
- 1 tsp rice vinegar
- spring onion
- sriracha if u want to make it a bit spicy
- just mix everything together
FRIED CHICKEN: - 2 chicken breasts (800 gram)
- 1 egg
- 1 cup (plantbased) milk
- 1 cup flour or ¾ cup potatostarch en ¼ cup riceflour for the glutenfree version
- 1 cup of panko
- 1 tsp paprika powder
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp ginger powder
- 1 tsp sesame oil
- pepper & salt
- Mix the eggs & milk. Mix the herbs and the flour. Cut the chicken in strings and throw it in the egg/milk mixture and then the flour mixture, repeat this 3 times.Â
- fry for a few minutes in hot oil, (use coconut oil for the healthier version 🙂Â
FRIED SHRIMP: - 1 pound (450 gram) shrimp, deveined and peeled but left with tail on
- ½ tsp garlic powder
- 1 tsp paprika powder
- ½ tsp salt
- ½ tsp pepper
- 2 eggs
- 1 cup flour
- 1 cup panko crumbs
- Mix the shrimp with garlic powder, salt and pepper. Combine the flour and paprika powder. Beat the eggs in another bowl and put the panko crumbs in another bowl.Â
- Heat some oil, dip the shrimps in the flour and the eggs and finally into the panko crumbs.
- Fry them for 5 minutes
SANDWICH COMBINATIONS:
TUNA:Â cucumber, avocado, sesame seeds, wasabi mayo
CHICKEN: wasabimayo, cucumber or lettuce, teriyaki sauce, fried onions
SHRIMP: shiracha or garlic mayo sauce, avocado, tobiko, chili pepper for extra spice
FUTO MAKI: pickled radish, cucumber, omelet, shitake, seaweed, surimi (leave out for vegan)
SAUCES:
wasabi mayo: mix mayonaise with wasabi
shiracha mayo: mix ½ cup mayo with 2 tablespoons shiracha and a dash of sesame oil
garlic mayo: 1/3 cup mayo, 1 tablespoon minced garlic or 1 teaspoon garlic powder, 1 teaspoon soy sauce, salt and pepper
And of course U can dip the Sandwiches in Japanese soy sauce and wasabi 🙂
How it is fold:
before serving cut it in two halves 🙂
and then enter Asian Heaven.. Enjoy..
